Thanks for the question! Here is my favorite flank steak marinade.
This is good for about 1.5-2 lbs of flank steak, you can always save the extra and warm it up as a sauce for the steak after the grill.
- 1/3 cup EVOO (extra virgin olive oil)
- 4-5 cloves fresh garlic
- Large fistful of fresh cilantro
- 1/2 Tablespoon of the following: chile powder, salt, pepper, paprika, cayenne
- 1/4 cup of SaSo’s Chile Pequin Pepper Sauce
- Shot of tequila
- Juice of one lime
Put all ingredients in a blender or food processor, blend well. Marinade the steak for a good 6-8 hours. Set out, let get to room temp and grill to your liking. If you have left over marinade, I’d suggest warming it up and serving it as a sauce. Don’t forget to let your meat rest for 10-12 minutes prior to slicing. I serve this recipe like fajitas, with grilled veggies, tortillas, guac, the goods! Quick tip, this works fantastic for chicken too. Enjoy!
