Fajitas are one of my favorite foods to make because they are simple, delicious and fun to serve. I typically will make the fajita meat and then set out bowls of all the different toppings. I put out shredded red cabbage, shredded cheddar cheese, sour cream, SaSomole, SaSo’s Salsa Rojo, and Mexican Spiced Rice for family/friends to put on top of their fajita.
1/4 cup Vegetable Oil
3 Tbls Lemon Juice
1 tsp minced Garlic
1 tsp Garlic Powder
1 tsp ground Cumin
5 Tbls SaSo’s Roasted Red Pepper Chipotle Hot Sauce
Salt and Pepper to taste
2 tsp Chipotle Chile Pepper
1.5 lbs boneless, skinless Chicken Breast
1 large Red Bell Pepper, sliced
1 large Green Bell Pepper, sliced
1 large onion, halved and sliced lengthwise
8 Tortillas, flour or corn
Juice of 1 lime
Sour Cream, for topping
SaSomole, for topping
Shredded Cheddar Cheese, for topping
Shredded Red Cabbage, for topping
SaSo’s Salsa Rojo, for topping
Combine 2 tablespoons of the vegetable oil, lemon juice, garlic, cumin, garlic powder, chipotle chile pepper, 3 Tbls SaSo Red Pepper Chipotle Hot Sauce, salt and pepper in a large ziplock bag. Add your chicken breast and then seal and toss the bag around to coat. Marinate in the refrigerator for at least 20 minutes.
Heat the outside grill or a large indoor grill pan to medium-high heat. Remove the chicken from the marinade and place it on the pre-heated grill. Cook the chicken about 5 minutes per side, until completely cooked on the inside. Remove chicken from the grill and slice into thin strips.
In a large skillet, heat up the remaining 2 tablespoons vegetable oil and and fry the onions and bell peppers until crisp-tender with some salt and pepper. Add the cooked chicken strips and 2 more tablespoons of the SaSo Red Pepper Chipotle Hot Sauce. Stir until well combined.
Wrap the tortillas in foil and warm them in the oven with the servers for 15 minutes.
Finish fajitas with your various toppings and more SaSo Red Pepper Chipotle Hot Sauce for more heat. SaSo’s Mexican Spiced Rice is a great dish to serve with these fajitas too.
