This Fried Chile Corn is made with SaSo’s Chile Pequin Hot Sauce. It is great as an appetizer or side dish. Although this recipe is easy to prepare, your guests are guaranteed to be impressed. Enjoy.
3 1/2 cups Sunflower Oil
15oz can Whole Kernel Corn
1/4 cup Corn Starch
1 Tbls Chile Powder
1 Tbls SaSo’s Chile Pequin Hot Sauce
Heat the oil in a deep pan over high heat. While the oil is heating, drain the corn in a colander and begin mixing it with the corn starch, chile powder, Chile Pequin Hot Sauce and sea salt in a large bowl. Make sure the corn is completely coated with the spices and corn starch. Add 1.5 tbls cold water and continue to mix.
Use a slotted spoon to transfer the corn into the hot oil. Stir and then deep fry the corn for about 3 minutes, until golden and crunchy. Remove the corn from the oil and place on a plate lined with paper towels to cool. Finish the corn with large sea salt flakes.
This fried corn tastes even better with a cold beer or fresh margarita. Enjoy!
