Who doesn’t love a loaded sweet potato? It is a quick meal to prepare with lots of nutrients. Try our version with SaSo’s 3 Pepper Tomatillo Hot Sauce. Enjoy.
2 Sweet Potatoes
Kosher salt and freshly cracked black pepper to taste
Pinch of Garlic
Pinch of Cumin
1/3 cup SaSo’s 3 Pepper Tomatillo Hot Sauce
1/3 cup Corn
1/3 cup Black beans
1/4 cup Shredded Cheddar Cheese
Finely chopped red onion
Pico de Gallo
Salsa (SaSo’s Salsa Rojo and Salsa Verde are great choices)
Preheat the oven to 400°F. Using a knife or a fork, carefully poke holes all over the sweet potatoes. Place the sweet potatoes onto a baking sheet and transfer to the heated oven. Bake for 50-60 minutes until fork tender.
Remove the sweet potatoes from the oven and slice them open. Scoop out a bit of the inside to make room for the stuffing. Season the interior with salt, pepper, garlic, and cumin to then set aside. In a medium bow, combine the corn, black beans, cheese, SaSo 3 Pepper Tomatillo Hot Sauce and cilantro and toss to combine. Using a spoon, stuff each sweet potato with equal parts of the mixture until slightly overflowing. Sprinkle a little extra cheese on top.
Move the stuffed sweet potatoes back into the oven and let bake for another 10 minutes to melt the cheese on top. Remove the sweet potatoes from the oven and sprinkle with any additional hot sauce or garnishes. Serve!
